I follow a number of food blogs and Stonesoup is one of my favourites. One night this week, in an attempt to put off having to think about what to make for dinner, I was flicking through email and a notification for Stonesoup’s latest post came up. An awesome baked egg dish called Cumulus Spiced Eggs. With a few variations (I had to make my own pasta sauce, added chick peas for carbs and used feta instead of goats cheese) I threw it together for dinner. Took about 15 minutes from start to finish, was super yummy and looked amazing. See for yourself.
